Cornbread - Gluten Free
Delicious!
Ingredients
1.5 cups milk
¼ cup butter, melted
1 large egg
1¼ cups cornmeal (be sure it's GF)
¼ cup sorghum flour
¼ cup white rice flour
¼ cup brown rice flour
¼ cup potato starch
1 tbsp ground flax seed (optional)
1 tbsp teff flour (optional)
1 tsp xanthan gum
½ cup sugar
1 tbsp baking powder
½ tsp salt
Directions
Preheat oven to 375 degrees. Grease an 8x8" baking pan, a 9" round pan, or muffin tin (or use paper baking cups)
Whisk together milk, melted butter, and egg in medium bowl.
In another bowl whisk together cornmeal, sorghum flour, white rice flour, brown rice flour, potato starch, flax seed, teff flour, xanthan gum, sugar, baking powder, and salt.
Pour your dry ingredients into your wet ingredients all at once and stir just until mixed.
Scrape into prepared baking pan or fill muffin cups approximately â…” full. Bake 25-30 minutes or 12-15 minutes for muffins, until toothpick inserted in center comes out clean.
