Hamburger Buns
Takes about 4 hours to complete. The buns are quite tasty!
Ingredients
1(.25 oz.) pkg of active dry yeast ( or two tsp )
1 lb flour (can be all purpose, can be wheat, white wheat, or other types)
1 c warm water ( 105 degrees)
1 large egg
3 T butter, melted
3 T sugar
1 1/4 t salt
1 tsp olive oil
1 egg beaten
1 T milk
1 t sesame seeds (optional)
Directions
1. Line baking sheet with silicone matt or parchment.
2. Place yeast into bowl of a large stand mixer, which in 1/2 cup of flower and warm water until smooth, let stand until mixture is foamy, 10 to 15 minutes.
3. Whisk 1 egg, melted butter, sugar, and salt thoroughly into yeast mixture. Add remaining flower (about 3 cups).
4. Fit a dough hook onto stand mixer and knead the dough on low speed until soft and stick, 5 to 6 minutes. Scrape sides if needed. Poke and prod the dough with a silicone spatula. If large amounts of dough stick to the spatula, add a little more flour.
5. transfer dough onto a floured work surface, dough will be stick and elastic but not stick to your fingers. form the dough lightly into a smooth, round shape, gently tucking those loose ends underneath.
6. Wipe out sand mixer bowl, drizzle olive oil into the bowl, then turn dough inside bowl several times to coat surface thinly with oi. cover bowl and let dough rise in a warm place until doubled, about 2 hours.
7. Transfer the dough to a floured work surface and pat to flatten bubbles and form into a slightly rounded rectangle of dough about 5 x 10 and 1/2 inch thick. dust dough lightly with flour if needed. Cut dough into 8 equal parts. Form each into a round shape, tucking ends.
8. Use your hands to gently pat and stretch the dough rounds in to flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inch apart on baking sheet. Dust buns very lightly with flour. Drape a pice of plastic wrap over the baking sheet (do not seal). Let rise until doubled, about 1 hour.
9. Preheat oven to 375 degrees.
10. Beat 1 egg with milk in a small bowl using a form until mexture is thoroughly combined. Ver gently and lightly brush the tops of buns with the egg wash and sprinkle with sesame seeds if desired.
11. Bake in the preheated oven until lightly browned on top. 15-17 minutes. Let cool, slice crossways to separate the buns. Ready to serve.
