Cinnamon Spiced Applesauce
This recipe only makes about 3 cups of applesauce.
Increase to 21 lbs of apples for 7 quarts of applesauce for canning and increase all ingredients by 7. (Increase by 3 lbs and add additional same recipe for every 3 lbs of apple increase.)
Ingredients
3 pounds apples, peeled, cored, cut into 3/4-inch pieces
1 cup water
1/3 cup (packed) golden brown sugar
2 1/2 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon
Directions
Combine apples, 1 cup water and brown sugar in heavy medium saucepan. Bring to boil, stirring occasionally. Reduce heat, cover and simmer until apples are very tender, about 25 minutes. Uncover and simmer until almost all liquid in saucepan has evaporated, about 6 minutes. Remove from heat. Stir in lemon juice and cinnamon. Cool 30 minutes.
Using a potato masher to mash to consistency wanted. To can/jar - put ladle into pint or quart jars and water bath for 20 minutes.
