Gluten Free Bread

Ingredients

1/4 cup coconut oil
1 3/4 cup barely warm water
3 T maple syrup
2 1/2 t yeast
3 cups gf flour
1/2 t scant xanthan gum
1 t salt
4 T baking powder??
2 t apple cider vinegar

Directions

First melt 1/4 cup of coconut oil but don't let it get too hot because you'll eventually be mixing it with yeast. Mix 1 3/4 cups barely warm water with three tbsp maple syrup, then mix in 2 1/2 tsp yeast, then cover on top of your stove. Turn stove on to 350.
In large mixing bowl: three cups bobs red mill gf flour, scant 1/2 tsp of xanthum gum, 1 tsp salt, 4 tbsp baking powder. After ten minutes mix together yeast mixture and dry mix, then add the coconut oil and 2 tsp of apple cider vinegar.
Pour into greased bread pan and cover on top of preheating stove for 25 minutes, then cook for 60 minutes.
