Chunky Chili
This chili recipe states it is for chunky beef... I buy eye of round roast and cube it to 1 inch cubes when I make it with beef. I've also made it with Turkey (home roasted) and it came out delicious!
Using fresh seasoning or making your own chili powder really enhances the flavors in the chili.
Ingredients
4 lbs boneless roast (chuck or round) or turkey
2 T Chili Powder
2 cans tomato paste (6 oz)
1 container beef broth (32 oz) (you can substitute veggie, chicken or turkey)
2 cans tomato sauce (8 oz)
2 t granulated garlic
1 t salt
1 t oregano
1 t ground cumin
1 t paprika
1 t onion powder
1/2 t ground red pepper (cayenne)
Directions
Brown the meat... remove from pan but save the drippings.
Add chili powder to drippings and cook stirring constantly for 2 minutes. (watch temperature)
Stir in tomato paste and cook on medium heat (watch temperature) for 5 minutes.
Return beef to pan.
Add broth and the rest of the ingredients. And cook for 1/12 hours on simmer, uncovered.

Transfer to crock pot on high for 2 hours and low for 1 hour
Meat should fall apart...
