Anything Muffins / Bread

An easy muffin / bread base recipe. It is very adaptable so be creative.

Some examples:
Blueberry: 3/4 cup blueberries, 1 T lemon juice
Apple: 1/2 cup chopped apples, 1 t cinnamon
Cinnamon: 1 t cinnamon, 1/4 cup raisins
Chocolate: 1/2 cup chocolate chips, 1/4 t vanilla
Try combos of your favorite fruits, nuts, pie fillings, jams, spices, etc.

Some modifications:
Replace egg with 4 oz of applesauce
Use mix of whole wheat and white flours
Use sour cream in place of milk
Use part yogurt in place of some milk

Ingredients

2 cups all-purpose flour
1/2 cup sugar
1 t baking powder
1/2 t salt

1 egg
3/4 cup milk
1/3 cup vegetable oil

Directions

Preheat oven to 400.

In a large bowl combine first four ingredients (flour, sugar, baking powder and salt). In a small bowl beat remaining ingredients (egg, milk and oil). Pour into the dry ingredients and stir just until moistened. At this point mix in your flavors (See examples above).

Fill greased or paper-lined standard muffin cups three-fourths full and bake at 400 for 18-20 minutes. (Will make 6 jumbo muffins or 24 mini muffins).

For a quick bread, pour all the batter into a greased loaf pan and bake at 400 for 45-50 minutes.
