Real Corn Tortillas
Made with whole corn
Ingredients
Day 1:
2lb Dried whole kernel corn
2 T Lime (pickling lime not the fruit)
2 Q Water
Day 2:
1/2 C Water
1 t Salt
Directions
Day 1:
Add corn, lime, and water to pot and bring to boil. Reduce heat and simmer for 5 minutes. Turn off heat then cover and let stand on stove-top overnight.
Day 2:
Next day, rinse well and separate corn in half. Put half in freezer for next time. Add the remaining half to food processor and add 1/2 to 3/4 C water. Process for 3 to 5 minutes till stiff like clay. Add water to thin or cornmeal to thicken if necessary. Now your ready to press into tortillas, sopas, etc.
