Mead/Acerglyn
This stuff is awesome, subtle, smoky, like scotch or bourbon or sherry. I think the second addition of syrup helps a lot...the maple flavor is very subtle so avoid a strong flavored honey. If you want to boost the maple flavor, add a teaspoon or so of fenugreek seeds in secondary. Good luck and report back!
Ingredients
For 5 gallons:
1 tbsp acid blend
2-½ tsp. Yeast energizer
½ tsp. Wyeast Wine nutrient
5 lbs wildflower honey
1 liter Maple syrup
Lalvin D47 yeast I.G. Approx. 1.060
Directions
10 days in: Added ½ tsp Wyeast wine nutrient
10 days later: Added 750 ml. maple syrup, 1 tsp Carlson Yeast Energizer and ½ tsp yeast nutrient. Agitated for 3 minutes with wine stirrer.
Bottled it 8 months later, primed as for beer for a dry sparkling acerglyn.
