Buckwheat Pancakes
Traditional French Acadian Pancakes, great with maple or blueberry syrup.
These pancakes are strictly buckwheat so they may be more dense. This recipe is for 2-3 people with 1 or 2 pancakes each, depending on size.
If using induction we use a setting of 6.
Ingredients
1 cup buckwheat flour
1 t baking powder (aluminum free)
2 T sugar
1/2 t salt
1 egg beaten
1 cup milk
2 T melted butter
Egg substitute could be:
2 T Arrowroot powder (for non egg binder) or
1/4 cup of applesauce
Directions
Preheat oiled/greased skillet. Mix dry ingredients. Add egg, milk, and butter and mix thoroughly.
Cook like any other pancakes or:
Pour about 1/4 cup batter onto hot griddle and spread thin with back of spoon. Cook until bubbles break on surface then flip and cook for about 30 sec or until cooked through.
Cover with your favorite topping.
