Ployes

Ployes are a French Acadian flat bread / pancake. Ployes are traditionally eaten buttered and rolled with every meal. However, they can also be used as a hearty pancake or as an elegant crepe.

Ployes are a healthy vegan food. They are are made with no eggs, milk, or oil, so they are fat free, cholesterol free, sugar free, and lactose free. A 4 1/2" diameter ployes is under 100 calories.

Anything you can stuff in a crepe or put on a pancake you can put in a ployes. Try a meat filling, fruit filling, or ice cream with chocolate sauce or simply butter and maple syrup.

Ingredients

1 cup buckwheat flour
1 cup wheat flour or less
2 t. aluminium free baking powder
1 t. salt
2 1/2 cups tap water

Directions

Mix all ingredients in bowl and beat with a spoon or whisk until all lumps are dissolved. Let mixture set for about 5 minutes.

Heat ungreased griddle or cast iron frying pan to 450F (Medium to Medium High).

Pour approx. 3 T batter onto griddle onto hot surface. With the bottom of a spoon, spread batter out in a circular motion until Ployes is 1/8" thick.

Cook on one side only for about 1 to 1 1/2 minutes. (If cooking surface is not hot enough the Ployes will stick.) For crispier Ployes, leave on the griddle for an extra minute.
