Scottish Oatcakes

These oatcakes are very easy to make. Have fun and enjoy them with a good cup of tea.

Ingredients

2 cups rolled oats
1 cup flour
3/4 cup melted butter (1 and 1/2 sticks)
1/2 cup sugar
1/4 t salt (a little less if using salted butter)
1/2 t baking soda
3 T boiling water

1 1/2 cup oats
1 1/2 cup flour

Directions

Preheat over to 375 F.

Combine dry ingredients in large mixing bowl.

Mix in melted butter and water.

For ease, line cookie sheet with parchment paper.

Roll out onto cookie sheet to desired thickness. For your first time I recommend about 1/4" thick.

Cut into 2 or 3 inch squares before baking. A pizza cutter works great.

For softer, chewy oatcakes bake for about 12 minutes or when browning of the edges starts.

For lighter, crispy oatcakes, bake for 20 plus minutes until golden brown.
