Beet Burgers
This is a great vegetarian substitute for a good burger. And, it's a good way to get rid of all those beets you get in your CSA. This recipe does have eggs. If you want to substitute you can use arrow root or tapioca starch as a binder. One T per egg. Substituting will allow this recipe to turn from vegetarian to vegan... If you have gluten issues you can buy gluten free bread crumbs.
Multiply the recipe evenly to make more. These freeze very well.
Ingredients
150 Grams Chickpeas (cooked and mashed, or soaked until soft, remove the peels)
1 egg
1/2 red onion (finely chopped)
145 Grams Beetroot (120 grams peeled)
80 Grams breadcrumbs
1 T Curry paste
65 grams of feta cheese as an alternative ingredient (can be added, folded in at the end before chilling)
Directions
Mash the chickpeas in a bowl until broken down but not until they are smooth.
Grate the beetroot into the bowl (wear gloves or your fingers will be red! protect your countertops!)
Add the finely chopped onion and the breadcrumbs. Stir.
Add the curry paste and the egg. Combine all.
Mold the mixture into 4 patties and chill in the fridge for at least 30 minutes before cooking.
Heat your oil and cook about 3-4 minutes on each side.
Prepare your plate like you would a regular burger... so tasty!
