Honey Buttermilk Bread
Tender buttermilk white bread sweetened with honey!
Ingredients
1 envelope yeast
pinch of powdered ginger
1 t sugar
1/4 c warm water
2 c warm buttermilk
1/3 c honey
1 t salt
3/4 t baking soda
6 c white bread flour (divided use)
1/4 c unsalted butter (or use less salt if butter is salted)
Directions
1) In a med size bowl m8x the yeast ginger sugar and warm water
2) Set aside for 5 minutes or until foamy
3) Whisk the buttermilk, honey, salt, and baking soda together and add it to the yeast mixture
4) Add 3 c of flour and mix until smooth, about 3 to 5 minutes on a low stand mixer
5) Pour in the butter until it is totally mixed into the batter
6) Add the rest of the flour one cup at a time, until it is totally mixed into the batter
7) Remove from mixer when the dough pulls away and finish hand kneading until smooth and elastic
8) Place in greased bowl, turning to grease all of the dough, cover with a clean tea towel
9) Allow to rise for 1.5 hours or until double in size
10) Punch down and form into 2 loaves. Place in greased loaf pans and then grease the top.
11) Let rise for 45 minutes
12) Preheat oven to 400 degrees
13) Bake for 30 minutes
14) Remove from oven and baking pans and let cool on rack.
