Guavaberry Liqueur

Guavaberries are a small red or yellow fruit abou the size of a cranberry. They ripen in late fall. Mix with Cruzan rum, spices, dried fruits and other ingredients and let stand and ripen. Always save some of the made recipe to share with next years recipe like a starter...

Ingredients

1 lb red guavaberries
1 lb yellow guavaberries
1 lb brown sugar
2 bottles Cruzan rum
1 lb prunes
1 lb raisins
3 sticks of vanilla beans
1 lb sorrell
1/2 lb ginger root
3 sticks cinnamon bark

Directions

Rinse berries. Pop out seeds - this is very tedious
Rinse the seeds, strain and save the water.
Put seedless berries into large pot, reserve 1/2 cup of each type of berry for later.
Add liquid saved from rinsing seeds into the pot and add brown sugar.
Boil mixture until berries are soft. Juice should be a medium syrup
Mash or grind berries that were saved and mix everthing with strongest old rum available. To the cooled mixter add prunes, raisins, vanilla beans, sorrel, ginger root and cinnamon bark.
Pour into bottles, cork and wire down securely. Taste will tell...
Strain and rebottle, Save strained parts and add to a bottle of rum to save to use again. (Drink a quarter of the bottle and then add, it will be fun!)
