Old Fashion Peanut Butter Cookies
This recipe comes from the Southern Living at Home cookbook. These cookies come out of the oven soft, but they become perfectly crispy as they cool!
Ingredients
1 cup butter (or Margarine)
1 cup peanut butter
1 cup granulated sugar
1 cup dark brown sugar
2 eggs
2 1/2 cups unbleached flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon pure vanilla extract
Directions
Beat the butter and peanut butter at medium speed with an electric mixer until creamy. Gradually add the sugars, beating well. Add the eggs and beat well.
Combine the flour, soda, and salt in a medium bowl and add to the butter mixture, beating well. Stir in vanilla. Cover and chill 3 hours.
Shape into 1-1/4 inch balls, placed 3 inches apart on an ungreased cookie sheet. Dip a fork in additional sugar; flatten the cookies in a criss-cross pattern. Bake at 375°F for 7-8 minutes. Remove onto wire racks to cool.
