Blueberry Pie Filling

Use this Blueberry pie filling for pies, cheesecakes, pancakes or the family favorite recipe Blueberry Squares. It's also delicious on ice cream!

Ingredients

2 T cornstarch (or tapioca starch)
1/2 cup sugar
2 cups fresh or frozen blueberries
1/2 cup water
1 t fresh lemon juice

Directions

In a heavy, medium saucepan, whisk together the cornstarch and sugar until there are no cornstarch lumps.
Add the water, blueberries, and lemon juice.
Cook over medium heat, stirring frequently until thick.
Remove from heat and cool.
Use as desired.

It stores tightly covered in the fridge for one week or freeze for longer storage.
