Vegan Hearty Root Soup

Able to mix and match other vegetables for different flavors. Taste will be different each time you make it. Freezes well, reheats in microwave easily. Good with a nice chunk of homemade bread.

Ingredients

4 potatoes, peel and dice
1 onion, chopped
1 garlic clove, cut in half
1 parsnip, peel and dice
2 carrots, peel and dice
1 turnip, peel and dice
1 celery root, peel and dice
1 fennel, diced
1 leek, washed thoroughly and thinly sliced
1 rutabaga, peel and dice
1 can vegetable broth
1/3 cup barley
1/3 cup cilantro, washed and chopped
4 cups water
salt and pepper

Directions

In a large saucepan add all ingredients and bring to a boil.
Simmer until all vegetables are soft and barley is cooked, about 40 minutes.
Add additional water if needed.
When complete, mash with a potato masher.
