Johnny Cakes - Virgin Islands Recipe #3

Caribbean style biscuit-like cakes that are great for dunking into savory dishes such as stews or soup. Local residents favor them for breakfast with a cayenne-honey.
Serves 18

Ingredients

1 1/2 cups flour
1/4 cup cornmeal
1 T baking powder
1 t salt
2 T sugar
2 T vegetable oil (plus extra for frying)
*3/4 cup water

Directions

1. Place first five ingredients in a bowl and whisk to combine.
2. Make a well in the center and slowly add the oil and then the water.
3. Gently mix until a lose dough forms.
4. Turn gently on to a very lightly floured surface and gently knead into a ball.
5. Cover and let rest for 15 minutes.
6. Shape the dough into a long roll, about 2-3 inches wide; cut into 18 sections.
7. Shape each piece into a small ball and then flatten into 1 1/2 inch thick disc.
8. Place a large skillet over medium heat. Add enough oil to coat the bottom of the skillet.
9. When the oil is hot, fry the johnny cakes in batches for 2-3 minutes per side, or until puffed and golden.
