Pizza Dough

Ingredients

4 cups bread flour. (will use 3 1/2 - 4 cups in recipe and may need more for rolling)
1 tsp sugar
1 envelope dry yeast
2 tsp kosher salt
1 1/2 cups water @ 110 degrees
2 T olive oil, plus 2 teaspoons

Directions

Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 T of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour. 1 T at a time. The dough should come together in a solid ball. Scrape the ball from the mixer and then knead, lightly flouring if needed.

Grease a large bowl with the rest of the oil, add the dough, cover and let rise to double the size. Once rise is complete, take dough out and split into 2 portions. Cover with kitchen towel and let rest for 10 minutes.

Dough is ready to pull into pizza rounds or squares.
