Sweet Potato Pancakes
Sweet Potatoes are a great source of Vitamin A! In one sweet potato, depending on the size and where it came from, you may get 35%-90% of your daily recommended value for Vitamin A!
Ingredients
In a blender:
1/2 cup of the cooked sweet potato scooped out from it's skin.
1 cup milk
1/2 tsp. cinnamon
1/2 tsp. vanilla
1 egg
In a bowl:
3/4 cup whole wheat flour
2 tsp. baking powder
1/4 tsp. salt
Directions
Blend all ingredients in the blender, until smooth.
Then added the liquid ingredients to the dry. You can add more milk if you need to for the consistency of pancake batter.
Then pour batter onto a hot griddle.
Flip pancake when it begins to bubble.
